Blueberries!

Blueberries are in season and really inexpensive right now. What are your favorite blueberry recipes? Can it be frozen for later enjoyment?

You could make blueberry pancakes and freeze them for future toaster thawing. Mmmm. I always love blueberry muffins, but I don't have an especially good recipe.

You could actually freeze those blueberries. Line a baking sheet with parchment or waxed paper and then spread the blueberries out. Not touching. When they are frozen you can transfer them to freezer bags and they won't all clump together.

I also have a recipe for you. I've made this for Christmas breakfast for a crowd. It's yummy.

Blueberry French Toast Bake

1/2 cup all-purpose flour
1 1/2 cups milk
1 Tbs sugar
1/2 tsp vanilla
1/4 tsp salt
6 eggs
10 slices French bread, cut into cubes
1 pkg (3 oz) cream cheese, cut into 1/2 inch cubes
1 cup fresh or frozen blueberries
1/2 cup chopped nuts
confectioner's sugar
blueberry or maple syrup



1. Generously grease a 2 1/2 quart casserole or 9x13-inch baking dish.
2. Beat flour, milk, sugar, vanilla, salt and eggs in a large bowl by hand until smooth. Stir in bread cubes until coated. Pour bread mixture into pan. Top evenly with cream cheese, blueberries and nuts.
3. Cover and refrigerate up to 24 hours.
4. Heat oven to 400 degrees. Uncover and bake 20 to 25 minutes or until golden brown. Sprinkle with confectioner's sugar and syrup.

The frozen blueberries worked beautifully. They are now sorted into several 1 cup servings in my freezer. They are just waiting for me to introduce them to the lovely recipes that RB sent. I am SO excited!
